Modena Aceto is better-known to everyone as balsamic vinegar. This top-quality condiment is a speciality of the city of Modena in the Italian region of Emilia-Romagna and is just one of the quality products created by an authentic and traditional process that goes back centuries.
Its rich brown hue has been described as resembling liquid gold, bringing it many devotees. It owes its warm colour and smooth texture to the careful process followed during its development. First, the juice is extracted from the finest Trebbiano grapes, to be fermented in wooden barrels. It then goes through the stage of acetic oxidisation which stops at maturation.
Its distinctive flavour - strong with sweet overtones - wins it many admirers.
Balsamic vinegar can be used in a wide variety of dishes, such as green salads or meat with vegetables, and it has countless benefits, such as:
Encouraging weight loss
Reducing cholesterol and blood pressure
Helping to control the level of insulin in diabetics
It's highly nutritious, containing magnesium, iron, potassium, phosphorus and manganese
